Homemade Spaghetti-O’s

Being a mom isn’t always easy but when you find a dish that is both loved by your kids and a breeze to make, you hold on to that recipe.

I grew up on spaghetti-O’s and it has always been a favorite, so when a friend shared tips of making it homemade, I took notes and then put my own twist on the classic. 

What you need...

πŸ₯•2 peeled and cleaned carrots 
πŸ₯¬2 cleaned and trimmed stalks of celery 
πŸ…1 15oz can of tomato sauce (you can use more if you want it saucier)

Blend these 3 ingredients until smooth.

What else you need...

🍲32 oz veggie broth
🍜16 oz of pasta, either ditalini or anelli
🧈1/2 stick of real butter
πŸ§€3/4 cup Parmesan cheese

In a pot start with your pasta and cook risotto style with your broth... which means low-medium heat and cook so that the pasta absorbs the broth, slowly adding the broth. Anelli pasta is what looks most like the original “o” pasta but it is hard to locate so I used ditalini pasta. Add butter once the broth is mostly absorbed. Add the sauce. Finally stir in the Parmesan cheese until it is cooked in to the dish.

*If you want to make it more adult style, add some saffron or fresh minced basil.

We add turkey meatballs (you can make or use store bought) and cut them into small pieces, toss into the pasta and then plate.

Bon appetite! My boys ooo and ahh over this and I am loading them up with a meal that will stick with them but full of veggies.
