Philly Quesadillas

I don't know about you, BUT I love a good Philly cheesesteak sandwich. Life is not about giving up all of the things you enjoy just to live "healthier", but instead reworking them or doing things in moderation. This recipe is one of our favorites and a go to for us (especially when we are doing the 21 Day Fix!)

It is easy and so tasty! You won't even miss the huge bun when you get hit with all of the flavor of your familiar favorite! :)

I like to prep food early in the week so this meal is a breeze to make as well.  I just chop up a bunch of onions and green peppers and have them ready to go in a container in the refrigerator for meals.

Philly Cheesesteak Quesadilla

1 teaspoon olive oil
1 teaspoon coconut oil
onions and green peppers (you will use about 1 cup per serving)
**you can cook up a lot and use them for other meals such as toss them in your morning eggs for a tasty scramble, it is all about saving time too!

Heat the fry pan at about medium with the oils for about a minute. Cook the onions and peppers until the onions are translucent (about 5-7 minutes).

3/4 c low sodium (or rinsed) deli roast beef chopped (per serving)

Warm the meat with your portion of veggies per serving.  
**My husband and I know we are cooking for two so we measure accordingly and just split the pan in two.

2 whole wheat tortillas per serving
1 teaspoon horseradish/1 tablespoon mustard mixture
4 thinly sliced provolone slices

Take a spray olive oil and coat a fry pan. Put a whole wheat tortilla in the pan. Apply a thin layer of the kicked up mustard to the top open side of the tortilla. Then put a serving of the veggies (1 cup) and meat (3/4 cup) on the tortilla. Top with the four slices of provolone and the other tortilla with another thin coating of the mustard. Cook on each side for a minute or two. Take a pizza cutter and cut into fourths.

If you are eating according to the 21 Day Fix, it is 1 red, 1 blue, 1 green, 2 yellows and the mustard is free.  This is a lot of food, so if you want you can cut it in half and make two meals out of it too!
