Cheesy Cauliflower "Bread"


Mmmm, cheesy bread!! Oh wait, it is not really bread but CAULIFLOWER??!!??

So easy and you will be enjoying every bite!



What you need:

1 large cauliflower head grated on a cheese grater (or you could pulse in a food processor)
1 teaspoon chopped garlic
1 teaspoon roasted garlic powder
2 eggs
dash of pink Himalayan salt
dash of fresh ground pepper
1 tablespoon of oregano
1/3 cup Parmesan cheese
1 cup of mozzarella cheese

For topping:
1 cup mozzarella cheese
a dash of dried parsley
a dash of red pepper flakes



Preheat your oven to 425 degrees.

After you grate cauliflower, it should look like cheese does when it is grated. You will want about 3 cups worth.



Then add in the eggs, Parmesan cheese, 1 cup mozzarella cheese, garlic, garlic powder, salt, pepper and oregano. Mix well so that all of the ingredients are combined.





Take some parchment paper and cover a cookie sheet. Place all of the "dough" onto the cookie sheet and flatten out into a rectangle.



Bake for 35 minutes at 425 degrees.

Take out and top the cheesy cauliflower with the remaining cup of mozzarella cheese. Then sprinkle with the parsley and the pepper flakes. Bake an additional 5 minutes.



Take a pizza cutter to cut your cheesy cauliflower "bread" into easy to eat strips. 



It is very similar to cheesy bread and it won't leave you with the guilt. Yup, you can enjoy your guilty pleasure!!
