Peanut Butter & Banana Nut Muffins
Completely stoked because I FINALLY ordered the "THUG KITCHEN: eat like you give a f4ck" official cookbook... and in it, a multitude of tastiness!
So if you know me, you know I LOVE the combo of peanut butter and bananas... Elvis was really on to something and when I came across this recipe, I was smitten!
These are something easy for meals on the go and definitely a combination that most kids would like too... and did I mention that it is HEALTHY!?!
Peanut Butter and Banana Nut Muffins
Makes 12 standard muffins (or you could use the mini pan and get at least 24!!)
2 cups whole wheat pastry or all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup creamy peanut butter
1/2 cup packed light brown sugar
3/4 cup plain almond or other nondairy milk
1 1/2 cups mashed ripe banana (this usually takes about 3 regular sized bananas)
1 teaspoon vanilla extract
1/2 cup chopped walnuts or peanuts (you could sup 1/2 cup chocolate chips in here... to keep it healthy, stick with dark chocolate)
1. heat your oven to 350*f. grab your muffin tin and grease that guy or use paper muffin liners.
2. in a big bowl, mix together the flour, baking powder, and salt. set that bugger aside.
3. now in a smaller bowl, mix together the peanut butter and brown sugar until it looks kinda creamy. stir in the milk, banana, and vanilla until everything is mixed up.
4. pour the wet ingredients into the dry and stir until just combined. if you mix it up too much, your muffins will be tough. don't waste all that peanut butter on some mucked up muffins. fold in the nuts now if you are using them.
5. scoop the batter into muffin cups. this makes a lot of batter, so fill those bad boys up to the brim so that you get nice, domed, bakery-style muffins. bake until a toothpick comes out clean when poked in the center of a muffin, 18 to 22 minutes. take them out of the tin and let cool for at least 15 minutes before eating.
*this cookbook is hilarious and has very colorful language... so for my blog I changed some of the words to make it more family friendly in wording.
