Homemade Spaghetti-O’s

Being a mom isn’t always easy but when you find a dish that is both loved by your kids and a breeze to make, you hold on to that recipe. I grew up on spaghetti-O’s and it has always been a favorite, so when a friend shared tips of making it homemade, I took notes and then put my own twist on the classic.  What you need... 🥕2 peeled and cleaned carrots  🥬2 cleaned and trimmed stalks of celery  🍅1 15oz can of tomato sauce (you can use more if you want it saucier) Blend these 3 ingredients until smooth. What else you need... 🍲32 oz veggie broth 🍜16 oz of pasta, either ditalini or anelli 🧈1/2 stick of real butter 🧀3/4 cup Parmesan cheese In a pot start with your pasta and cook risotto style with your broth... which means low-medium heat and cook so that the pasta absorbs the broth, slowly adding the broth.
